Our wine is made a few miles from the vineyard with the help and expertise of award winning winemaker, Will Davenport. Despite the modern equipment at his winery Will’s winemaking methods are traditional. Will believes the wine should be able to ferment and develop in the most natural way possible using natural yeast to avoid over treatment of the wine. This natural approach, combined with the technical knowledge and superb equipment allows him to get the most from the grapes.
2009 was Charles Palmer’s first vintage producing a total of just 957 bottles, and has been recognised with a Gold medal at the Sommelier wine awards 2014. It also achieved the honour of being Critics Choice, only one other Sparkling wine achieved this (Charles Heidsieck 1995 Vintage Champagne). It is a blend of 70% Pinot Noir, 30% Chardonnay. The wine has a perfect balance of sugar and acidity that results in, "fruit and biscuity aromas, with flowers, yellow and golden apples, nuts and bread." According to Riccardo Giacomelli of Bocca di Lupo. It is " fresh and vibrant-very opulent," added Bruno Piane of Babbo. It is fabulous solo, or try it with something like mushroom risotto or quail, ( there are very few bottles of this left).
